A pub kitchen works to a tight timetable. Food is fitted in between lunch and the evening rush, weekends bring the peaks, and a cellar, function room or flat may share the same building. We arrange TR19 extract cleaning quotes for pubs and bars across Hertfordshire, North London, Luton, Bedford and Harlow. An independent specialist provider carries out the clean and issues the certificate.

Whether you run a food-led pub or a bar with a small grill, the question is the same. When was the whole extract system last cleaned, and can you prove it?

Which TR19 frequency band pubs fall into

TR19 Grease bases minimum frequency on daily cooking hours: every three months for 12 to 16 hours, every six months for 6 to 12 hours and every twelve months for 2 to 6 hours. A pub serving lunch and evening food most days usually sits in the six-monthly band. A wet-led bar with a short evening menu may be light use and annual, while a food-led pub serving all day can reach the quarterly band. The provider's grease readings confirm which applies, and our TR19 compliance guide sets out the bands.

What the fire service and your insurer expect

The Regulatory Reform (Fire Safety) Order 2005 puts the duty to assess and reduce fire risk on the responsible person. Bedfordshire Fire and Rescue Service points out that premises needing a licence, such as one under the Licensing Act 2003, must keep a written record of the significant findings. Hertfordshire Fire and Rescue Service inspects premises through a risk-based programme, and London Fire Brigade guidance says fire safety officers will ask for post-clean records when they audit a kitchen. Insurers may also refuse a claim if a fire is traced to a poorly maintained duct. If you lease or tenant the pub, agree with the owner who books the clean and who keeps the certificate.

What a full clean includes

The provider cleans the canopy and filters, the whole ductwork run to the discharge and the extract fan, fitting access panels where a section is boxed in. Grease-depth readings are taken before and after, and you receive a certificate with before-and-after photographs. Many pubs here trade from old buildings. St Albans was the first coaching stop on the road north out of London, which is why it has so many old inns, and Ye Olde Fighting Cocks on Abbey Mill Lane is one of several pubs that claim to be England's oldest. In buildings of that age a duct can run through ceiling voids and upper floors, so if nobody knows the route, get an inspection report first.

Timing it around your trade

Cleans can be booked after last orders or on a morning before opening. Bank holidays, beer festivals and busy beer-garden weekends are worth avoiding. Pubs near Vicarage Road in Watford may prefer a date away from home match days, and the same goes for pubs close to Kenilworth Road in Luton.

Pub companies and multi-site operators

Hertford is home to McMullen's, a family brewery founded in 1827 that owns more than 130 freehold pubs, mostly in the Home Counties. If you manage several pubs, whether for a brewer, a pub company or your own group, we can arrange one quote across the estate. Each kitchen gets its own interval and its own certificate, and dates are staggered so food service carries on elsewhere. The cost guide explains what drives the price.

Frequently Asked Questions

How often does a pub kitchen extract need cleaning?

A pub serving food at lunch and in the evening usually falls in TR19's moderate band of 6 to 12 hours a day, which means at least every six months. All-day food can mean every three months, and a short bar menu may be annual.

We only serve food at weekends. Do we still need a clean?

Yes. Fewer cooking hours mean a longer interval, but grease still builds up in the duct and fan. London Fire Brigade guidance treats an annual clean as the minimum for any catering extract unless the fire risk assessment says otherwise.

Who books the clean in a leased or tenanted pub?

Check your lease and agree it with the owner. Either way, keep the certificate on site with the fire risk assessment and send a copy to whoever insures the building.

Does a licensed pub have to write down its fire risk assessment?

Yes. Bedfordshire Fire and Rescue Service guidance notes that premises needing a licence, for example under the Licensing Act 2003, must record the significant findings. File the TR19 certificate alongside it.

Do you employ the cleaners?

No. We arrange TR19 extract cleaning quotes and pass your enquiry to an independent specialist provider, who does the work and issues the certificate.
